Apple Crostata
Crostata is an Italian baked tart free form pie. Jams are traditionally used or you can fill it with cherries, peaches, apricots, berries, or apples. The crostata can also be filled with pastry cream topped with pieces of fresh fruit; this is called crostata di frutta. A typical central Italian replaces jam with ricotta mixed with sugar, cocoa, or pieces of chocolate and anisetta; this is called crostata di ricotta.
I decided to use granny smith apples. You can just marinate the fruit with sugar and cinnamon and add them in the center of the dough and bake or you can cook the fruits first.

Another Italian dessert is the lemon tart. Very tangy and easy to make. For this you would want to use only the very best lemons with a good juice and a fragrant peel.
