Well this was cool. Customer asked me to do a cake for his college son. His favorite sport is snowboarding. So why not make a winter cake with his favorite sport. So this was a vanilla sponge cake, chocolate mousse with fresh strawberries as the filling and chocolate fudge as the icing. Then layered on top a white fondant with clear sprinkles as the snow. Tree, snowboard shoes, snowboard and goggles made out of fondant.

A Toy Story 2 Birthday Cake
This is why I love making cakes. The challenge, being creative and having fun. Someone asked me to do a birthday cake for there 2 year old son. His favorite movie is Toy Story. So I started to watch the movie and what caught my eye is when the characters are on the bed hanging out.
So I did a vanilla cake with chocolate mousse inside and the outside icing chocolate fudge. The bed and the wooded floor was made out fondant. The color of the blanket was brushed with edible blue powder. Now I could of made the characters out of fondant but I decided to buy the little toys so the birthday boy can have it and treasure it forever. Happy Birthday Alex...To Infinity and Beyond!!

Strawberry Shortcake
This is my favorite cake. Customer asked if I can do a strawberry shortcake for her son's birthday. But wanted strawberries dipped in chocolate as the topping of the cake. So I did a sponge cake soaked in a semi-sweet syrup. Layered it with fresh strawberries and fresh whip cream which the cream was also the icing. It's heavenly delicious.

Wine Crate Cake
The best things in life get better with age. Wait! Maybe it should say, "get better when you eat a wine crate cake". What better way to get a cake for your 40th Birthday that represents you.
This was going to be a big challenge, but i took that challenge.
So I started off by making the wood pieces out of fondant, made the pattern and then brushed it with edible powder paint . I also made the leaves out of fondant too . After that, I mold the wine bottle out of dark chocolate and shaved white chocolate as the shredded paper. The grapes were real which gave it a nice touch and the cake is red velvet with cream cheese. At the end the cake looked awesome!

Pea in the Pod Baby Shower
Someone asked me if I can do a Baby Shower cake and favor cookies for a Pea in the Pod theme. This was so much fun. I decided to do a chocolate cake with chocolate mousse filling/chocolate ganache and the icing vanilla buttercream. For the topping I did a pea with a baby head in fondant. The roses are molded in pink chocolate. The butter cookies are shaped out of a pea. The baby face is made out of fondant with green icing and then bagged and tied in pink and green polka-dot ribbon. This was fun!

Dulce De Leche Cake
The customer who asked me to do the Gluten-Free Cake wanted a regular cake for people who are not Gluten-Free.....lol. So I decided to make a Dulce De Leche Cake. Inside is chocolate cake with vanilla cream cheese filling, drizzled with chocolate ganache and caramel. The icing is vanilla cream cheese frosting drizzle with chocolate ganache. I made chocolate roses, the letters and flowers I made from fondant....oh and the banana too. Why is there a banana? Well.... it's a personal joke......lol.
Gluten-Free Chocolate Mousse Cake.
A customer asked me to make a Gluten-Free Chocolate Cake for her birthday. What is Gluten-Free? Well what's Gluten? Gluten is a protein composite found in foods processed from wheat and related grain species, including barley. So when using regular flour it has wheat. It gives elasticity to dough, helping it to rise and to keep its shape. So for those who suffer from a wheat or gluten allergy may have Coeliac Disease. Or some people just want Gluten- Free foods because they are health conscious.
So when using a Gluten -Free Flour, there is no wheat. It has rice flour, tapioca starch, potato starch and whole grain brown rice flour. Now people might think it might not taste so great, but it actually taste good. It all depends how you prepare it.
This cake is a Gluten-Free Chocolate Mousse cake. Inside, Gluten-Free chocolate cake with a chocolate mousse filling and outside a chocolate fudge buttercream. Since she loves monkeys, I decided to design a monkey with pretty flowers out of fondant.

Princess Rapunzel Cake for a Princess
It was so much fun making this cake for a sweet princess for her 3rd Birthday Party. Her favorite character is Rapunzel from the movie Tangled. So why not make a Princess Cake. The bottom cake was a 2-layer rich dark chocolate with chocolate mousse filling. The icing was a vanilla buttercream with chocolate butterflies and castles that i made, with a touch of sugar pearls. The top, which is the princess cake, was a 3-layer dome vanilla cake with chocolate mousse filling. The icing was a vanilla buttercream but had to be dyed in the colors of the Rapunzel dress. Now, I could of molded Rapunzel's body and dress with fondant but I wanted the birthday girl to actually have her favorite character to keep. So I brought the doll, removed her dress, wrapped her in clear plastic wrap from hip down so she won't get dirty, made a hole in the top of the cake, inserted her in and piped her dress in purple, lilac and pink buttercream. Thanks Chicas for asking me to do this cake for her special day.

Monkey Cake part 2
The second monkey cake above was for the baby boy to just dig in with his bare hands and just go crazy. It was a 2 layer vanilla cake, chocolate buttercream filling and chocolate buttercream for the icing. The monkey face was made out of fondant and his little fur was made out of chocolate icing.

was for the adults. It was a two layer vanilla cake with liquor chocolate mousse filling and chocolate buttercream frosting. As the topper i made a monkey and flowers out of fondant.
Baby Shower Cake
One of my friends requested a baby shower cake for a co-worker at work. The baby shower was for a male. So I didn't want the cake to be too girly. But since the father-to-be was having a girl, I had to make it a little girly.....so i made a 2 layer dark chocolate cake with a liquor chocolate mousse filling with fresh strawberries and vanilla buttercream icing. The topper was shaped of a baby feet made in pink fondant and i molded dark chocolate hearts. Yummy.......:0)

Baby Shower Cake
I recieved an order for a Baby Shower Cake. I must say I had fun with this, but, it was a lot of work. It was a 2-tier cake. Bottom tier was a dark chocolate cake filled with a layer of raspberry jam spread thinly, chocolate mousse, and drizzled with chocolate ganache. The top tier was a vanilla cake with just chocolate mousse filling. The frosting is vanilla with a cornflower blue ice coloring. The topper I made from fondant, which, was 2 books and a sheep laying on top.The theme of this Baby Shower was about story books. I also made the flowers and the borders from fondant too. Good thing I took sculpting classes in college. Plus I had a fb friend who gave me some pointers on sculpting with fondant. Thank you Tonia.

Strawberry Shortcake
The origin of shortcake is Europe. Shortcake got its name from the baking procedure wherein butter or shortening is added to flour to create dough that is light and airy. The tradition of referring to fat or lard as a type of shortening stems from the 15th century term, “to shorten” which means “easily crumbled.” Its tender texture comes from its flaky mixture as opposed to the tougher breads.
The crumbly and tender shortcakes found in early recipes, which resembled scones, became round in shape when the usually triangular shaped pastry kept crumbling to pieces. The round ones held their shape better, making this a practical choice for bakers.
Putting strawberries and shortcake together with whip cream is more of an American tradition. Strawberry shortcake parties became very popular in America around 1850. It was a tradition to celebrate the coming of the season of summer.

Superbowl XLV Cake
Superbowl XLV....The Pittsburgh Steelers and the Green Bay Packers. So i decided to make a Superbowl Cake. Two layer yellow cake with chocolate frosting. Inside the bottom cake is chocolate filling and in the football cake a vanilla filling. Green icing for the grass and for the football trim a white fondant. And of course my hubby added a the final touch by putting both team's helmets on top. Cool!

Carrot-Walnut Cake with Cream Cheese Frosting
This two layer cake consists of grated carrot mixed batter with finely chopped walnuts. The carrot softens in the cooking process, and the cake usually has a soft, dense texture. The Hummingbird Cake
This cake is an old favorite from down South. Often referred to as a type of "spice cake," it features bananas, pineapple, and pecans (or sometimes walnuts) in a light cake, topped with a cream cheese frosting and pecans. Some say it's called hummingbird cake for it's nectar -like sweetness; others say it's so good , it makes you hum!
